Cronlund Family RED beans and Rice Recipe
Ingredients
One or two medium onions, diced
Two green peppers, diced
3 lbs spicy smoked sausage (Andouille is the best variety)
Two of those bigger cans of red kidney beans
Quart chicken broth
Bay leaves (optional)
Tomato Sauce or Tomato Paste (optional)
Long grain rice (prepare separately)
Steps
Cut sausages lengthwise into quarters and then slice.
Slowly brown the sausage in a large pot over medium high heat.
Add the green peppers and onions to get them softened.
Add broth and beans and bay leaves. Up to you if you want to drain the beans. I’ve done it both ways, and I prefer undrained.
Stir.
Salt and pepper and Slap Ya Mama or Tony Chachere’s to taste.
Add water to cover everything by about an inch and bring to a boil.
Boil for at least an hour. Add water as needed. Keep stirring throughout.
If you’re adding diced tomato, you can add it at any time, depending on how soft you want the tomatoes to be.
When beans are good and soft, let the boil go a bit longer until the broth is good and thick.
Use a spoon to kind of mash the beans a little in the pot.
If using tomato sauce or paste, stir it in now.
Serve with prepared rice.
Notes
None of the amounts listed are gospel. Play around with them. Add more green pepper. Add less sausage. Whatever. You really can’t do this wrong.

Put rice into red beans. Pour red beans over rice. Again, there really isn’t a wrong way to do this…
This makes enough to feed a small army. You can adjust quantities of ingredients as needed.
