Cronlund Family Jambalaya Recipe

Ingredients

  • One or two medium onions, diced

  • Two green peppers, diced

  • 3 lbs spicy smoked sausage (Andouille is the best variety)

  • Six to Twelve pieces of bone-in chicken - legs and thighs

  • Long grain rice (prepare separately)

Steps

  1. Pat chicken dry. Season with Tony’s or Slap Ya.

  2. Heat some oil in a large pot / dutch oven over medium heat.

  3. Cook very very slowly but very very thoroughly. Like, you want to get a good rich brown color. Turn as needed.

  4. Meanwhile slice the sausage. When the chicken is brown enough for you, add the sausage and stir.

  5. When the sausage is also got that nicely browned look, add the diced veggies.

  6. Cook stirring till softened.

  7. Add three cups of water and one and a half cups of rice. Stir.

  8. Bring to a boil, then reduce heat to medium low and cover.

  9. Cook for 20 - 30 minutes or until rice is cooked through.
